Hello Slow Foodies!
Today's recipe come courtesy of Slow Food Chapter President Gail Eggeman. This is a simple and fresh recipe for cranberry apple relish, perfect for your Christmas or Festivus celebrations!
Ingredients:
- 1 orange, peeled and seeds removed
- 2 cored apples
- 1 bag of fresh cranberries
- 1/2 cup of sugar
- A little orange juice (eyeball it, you want to add a little moisture to dissolve the sugar but you don't want it too soupy)
- A splash of Cointreau or whiskey if you're feeling sassy
Put the orange through a food processor and remove.Put apples and cranberries into food processor and pulse until coursely chopped. Toss fruit together in the mixture of sugar, juice and liquor.
Blogger Notes: While I have not tried this recipe myself, I would imagine that zesting the orange and adding it the zest to the mix would also work really well!
